Pumpkin Pie Loaf

I really like this recipe - light, but full of pumpkin pie flavour. 
I made it in a 9x11inch pan, 
but it would also bake well as loaves or as a layered cake.

I started by putting two cup of oats into a food processor and grinding it to a flour. 
Pumpkin Pie Loaf
Blend together and set aside:
2 cups oat flour
1 cup cake & pastry flour
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1/2 teaspoon cloves
In a large bowl beat 3 egg whites until fluffy, add:
1 cup brown sugar
1/2 cup granulated sugar
1/2 cup vegetable oil
1/2 cup buttermilk
2 cups of pumpkin puree
Slowly blend dry ingredients into the wet, then pour into desired pans and bake at 350°F. (Optional: nuts, chocolate chips, cranberries...)

For topping I used brown sugar and cinnamon with oats and walnuts. Also good would be a simple sugar & cinnamon, a light citrus frosting, ..maybe cream cheese frosting. Pecans, icing sugar...or just ..nothing.
