There have been muffins and squares, loaves, bundts, and layers with icing. Sometimes I make it sweeter, sometimes I make it "healthy." It never fails.

Gerry's Banana Bread:
3 CUPS whole wheat flour
1 CUP sugar
1 TSP baking soda

4 eggs (at room temperature)
12 or so very ripe bananas
(best: thawed freezer bananas)
4 TBSP melted butter
Whip the eggs until stirred and foamy.
Add the bananas and mix gently so not to mash the bananas too much
(unless you don't like sweet banana morsel-pockets in your bread).
Blend in the dry ingredients a cup at a time (so not to clump) and gently mix until well blended but not smooth (again, sweet morsels..).
Add whatever you're going to add.
My loaves last night pleased the teenager greatly:
Chocolate chips in one, a plain loaf for the other.
I mixed the chocolate chips in after the batter was divided into the well buttered baking dishes:
Then the loaves were given a generous sprinkle of
brown sugar, granulated sugar, and cinnamon topping:
and baked for about one hour (maybe a few minutes more) at 350F:
